Vegan Protein Bars

These homemade vegan protein bars are easy to prepare, budget-friendly, and perfect for meal prep. You can also make a larger batch and store them in the freezer for later.

1 ½ cups rice krispies
1 tbsp peanut or almond butter
2 tbsp soy milk
½ cup vegan white chocolate
3 tbsp vegan protein powder (I used pea protein)
1 tsp coconut oil
Optional:
50 g dark chocolate / vegan milk chocolate

Melt the white chocolate together with the coconut oil in the microwave in short intervals until smooth and fully melted. Add the peanut butter, protein powder, and soy milk, and mix well until you get a smooth, creamy mixture.
Add the rice krispies and mix until everything is fully combined. Transfer the mixture into a well-greased baking dish or muffin liners. You can use a small loaf pan or about 6 small muffin molds.
Freeze for at least 1 hour. After freezing, drizzle with melted dark chocolate if desired for an extra upgrade. If you used a tray, cut into bars.
Store in the freezer.
Notes:
You can add nuts, shredded coconut, or chia seeds for extra nutrition.
Don’t like white chocolate? You can replace it with dark chocolate throughout the recipe.
For a better texture, you can mix in a little ground oats.
Peanut butter can be replaced with any nut butter, almond butter works best.
