Vegan 5-ingredient rice krispie snack bars
A homemade healthy snack bar is the perfect solution for anyone who wants a sweet treat or dessert without eating junk food, and it is also gluten-free. The bar combines crispy rice cereal, creamy peanut butter, and dark chocolate. It’s an easy recipe to make, suitable for both kids and adults. It is also vegan, gluten-free, and made with simple, accessible, and wholesome ingredients.
You can freeze it and it lasts a long time (although let’s be honest – you’ll probably finish it quickly because it’s so good!).

2 cups rice krispies
4 tbsp natural peanut butter
2 tbsp organic maple syrup
2 tbsp soy milk
100 g dark chocolate
a pinch of coarse salt (optional)

In a bowl, mix the peanut butter, maple syrup, and soy milk until fully combined and smooth. Add the rice krispies and mix well. Lightly grease a pan or line it with baking paper, then transfer the mixture and press it down evenly. Place in the freezer.
Melt the chocolate in the microwave (you can add a bit of oil if you want) in 15–30 second intervals until fully melted. Drizzle the chocolate over the mixture, sprinkle a little coarse salt on top, and return to the freezer. After about 2–3 hours, remove from the freezer, cut into bars, and serve.
