Gluten-free vegan lemon cookies

Gluten-Free Vegan Almond & Lemon Cookies

These cookies are healthy, soft, and absolutely delicious – the kind you won’t be able to stop eating! Made with simple plant-based ingredients, they’re naturally gluten-free and full of fresh lemon flavor with a subtle almond richness.

Perfect as a light snack, with coffee or tea, or whenever you’re craving something sweet but still wholesome.

1 1/2 cups almond flour
Zest of 1 lemon
Juice of 1/2 lemon
2 tbsp cornstarch
2 tbsp coconut sugar
1 tbsp maple syrup
1 tsp baking powder

Frosting:

3 tsp vegan cream cheese
1 tbsp maple syrup
1 tsp soy milk

Optional:
Cinnamon

In a bowl, zest one lemon. Then add all the remaining ingredients and mix well until a dough forms (you can mix with a spoon or with your hands). Shape the dough into small balls and place them on a baking tray. Bake in a preheated oven at 180°C (350°F) for about 10 minutes, or until lightly golden.

Meanwhile, in a separate bowl, mix all the frosting ingredients until smooth. Once the cookies come out of the oven, let them cool completely before adding the frosting. You can also sprinkle cinnamon on top for extra flavor. It’s recommended to store the cookies in the fridge and serve them chilled!
