Crumbl’s Churro Cookie (Copycat Recipe)
Soft, bakery-style cookies that are surprisingly easy to make at home! These vegan Crumbl-style cookies are topped with a dulce de leche–flavored frosting that gives them a rich, churro-inspired flavor.
If you’re a fan of soft, oversized cookies, this recipe is for you. The cookie base is incredibly versatile and can be customized with different flavors and toppings. I’ve used it to make chocolate chip cookies, cinnamon cookies, and sprinkle cookies – simply switch up the frosting or mix-ins to create your own favorite version.

Cookie Ingredients (Dry):
1 1/2 cups all-purpose flour
1 tsp baking powder
1/3 cup brown sugar (or cane sugar)
1/3 cup granulated sugar
2 tsp tapioca starch
Cookie Ingredients (Wet):
100 g softened vegan butter
2 tbsp applesauce
1/2 tsp vanilla extract
2 tbsp soy milk
Frosting:
125 ml vegan whipping cream
2 tbsp soy cream cheese
2 tbsp powdered sugar
2 tbsp vegan dulce de leche spread
For Topping:
Ground cinnamon

Place the vegan butter in a mixing bowl and soften it with a spatula until smooth. Add the granulated sugar and brown sugar, and mix well until fully incorporated into the butter. Add the applesauce, vanilla extract, and soy milk, and mix until combined.
Add the tapioca starch and baking powder and stir to combine. Then add the flour and mix until a soft dough forms. The dough should feel slightly buttery – that’s exactly the texture you’re looking for, as long as it’s easy to roll into balls.
Divide the dough into equal-sized balls and place them on a baking sheet lined with parchment paper.
Bake in a preheated oven at 180°C (350°F) for about 10 minutes. Be careful not to overbake – even if the cookies seem soft when they come out of the oven, they will firm up as they cool. Remove from the oven and let them cool completely.
Meanwhile, prepare the frosting. Whip the vegan whipping cream until it begins to thicken. Add the soy cream cheese and powdered sugar, and continue whipping until you have a stable frosting. Add the vegan dulce de leche spread and gently fold until fully combined. Transfer the frosting to a piping bag and refrigerate until the cookies have cooled.
Once the cookies are completely cool, pipe a generous layer of frosting onto each cookie and finish with a sprinkle of cinnamon for that classic churro flavor. 🍪
